Isha Lakhani of our neighbourhood is a cooking enthusiast. She  demonstrated the all time favourite Sizzlers in Italian and a unique Desi Punjabi Style.

Sizzler – Punjabi style

Chana kebabs

  • Ingredients:
  • Red / Black Chana
  • Potatoes
  • Bread Crumbs
  • Red Chilli Paste
  • Garlic Paste
  • Ginger Paste
  • Chat Masala
  • Salt

 

Method:
Soak the Chana overnight. Boil it in a pressure cooker and mash them.

Add boiled and mashed potato. Add chilli, garlic and ginger paste. Add salt and chat masala to taste. With help of bread crumbs make small tikkis and deep fry.

Hariyali paneer
Ingredients:

  • Fresh Paneer
  • Hung Curd
  • Green Chillies
  • Coriander Leaves
  • Mint Leaves
  • Chat Masala
  • Black Salt

Method:

Cut Paneer into 1” X 1” pieces. Mix all other ingredients in a bowl. Marinate Paneer in this mixture for half hour. Grill the Paneer.

Along with this, we will need Lemon Rice and Dal Makhani and some boiled Veggies (carrot, beans, green peas, cauliflower, corn, broccoli etc) and some French fries /wedges for the sizzler.

 

 

Sizzler – Italian style

Pasta in White sauce

Ingredients for White sauce:

  • Olive Oil-1tbsp
  • Corn Flour-2tbsp
  • Milk 2cups
  • Garlic Cloves 4-5
  • Dried Herbs(Basil, Oregano, Parsley, Thyme)
  • Fresh Basil Leaves
  • Fresh parsley
  • 5-7 peppercorns, salt as per taste.

Method:  In a non stick pan heat oil. Add garlic and herbs and then add corn flour. Sauté till pink. Now add milk slowly and cook until it gets thick. Once it gets cooler churn into fine paste in mixer.

Cook pasta of your choice according to instructions on packet. Just boil al dente (cooked so as to be still firm when bitten). Don’t overcook.
In a fresh pan put 2tbsp olive oil. Add chopped capsicum(1-inch pieces). Sauté.

Add par boiled sweet corn kernels. Add White sauce and mix well. Now then add pasta.(you can also add mix boiled veggies).
Garnish with lots of cheese and freshly ground pepper.

 

Herbed rice

Ingredients:

  • Par Boiled Basmati Rice 2cups
  • Butter 25 Gms
  • 5-6 Cloves Of Garlic-Grated,
  • Mix Dry Herbs (Basil, Oregano, Parsley, Thyme),
  • Fresh Basil, Salt To Taste.

Method: Heat butter in a pan. Add grated garlic and herbs. Sauté. Add rice and mix well. Garnish with chopped fresh coriander leaves.

 

Cheese triangles

Ingredients for outer layer:

  • Maida 2cups
  • Dry Oregano Mix
  • Chilli Flakes
  • Soda ½ tsp
  • Baking Powder ½ tsp
  • Salt To Taste

Add all of above and knead a dough. Set it aside for some time.
Ingredients for stuffing:

  • Paneer 200 Gms
  • Cheese Spread-2tbsp
  • Onion 1
  • Dry Mix Herbs
  • Fresh Parsley
  • Pepper Powder
  • Salt

Mix all this in a bowl.

Method: Make equal portions of dough and roll them into small rotis. Cut into half. Fold the half portion and make a cone. Fill it with paneer stuffing and seal it. Deep fry.
Along with this we will need some boiled veggies (carrot, beans, green peas, cauliflower, corn, broccoli etc and French fries /wedges for the sizzler. You can also serve with garlic bread or pizza sticks.
